Peach BBQ Chicken Sandwiches

Last Sunday night, Molly and I made BBQ chicken sandwiches, carmelized onions and grilled peaches for a little Mav's watch party! It was super easy, fun, and delicious. In fact, it was so good, I am making it again tonight for my parents to try!

Here is the recipe if you'd like to try it, it turned out great! And look at my pretty peonies I found while I was out gathering the goods for the soiree!



We started by peeling the peaches, and cutting up the onions. We had put a BBQ rub on the chicken and let it marinate in that with a little bit of olive oil and lemon juice (maybe a teaspoon of each) overnight in a ziplock bag.  If you don't have the time, or forget to apply the rub the night before, its alright, you can just do the rub before you throw it in the oven! Elle Worsham gave me that rub, so she will have to comment on this post with her recipe for it!

To cook the chicken, we glazed the chicken with with BBQ sauce and then broiled them on high for 10 minutes on each side in a lined baking pan. So, you only flip them once and cook 20 mins total. We used three chicken breasts, which made for 6 tasty sandwiches!

Meanwhile, as that cooked, we threw our chopped onions into a skillet. Onions cook down a ton, so for planning purposed, count each onion as enough for two people. Saute the chopped onion in a tablespoon of butter or oil for 20 mins over low-med heat stirring occasionaly so it wont stick to the pan.

After you flip your chicken, heat up your grill pan (I got one this weekend, yea!) or griddle and spray generouly with cooking spray.  Place a few fresh peeled and halfed peaches on top and let them cook for 10 mins. You'll want one half peach for each sandwich.

Pull the chicken out of the oven and shred using two forks and pulling at it gently. Elizabeth was gracious enough to shred our chicken for us, and add the rest of the sauce to make it sandwich ready! Mix in warm BBQ sauce with the shredded chicken, adding in about a quarter cup at a time until you are at your desired BBQ sauce to chicken ratio.

Pile it all on and sandwich bun and you are ready to eat! You can either serve the onions on the sandwich or on the side, I put a little bit of avocado on my sandwich which was a great addition! We served with a mixed green salad with a raspberrry walnut vinegarette, grapes and walnuts. Not to mention a glass of Diseno Malbec, my favorite wine of the summer!

Shopping List: (serves 6)
3 Skinless Chicken Breasts
3 c BBQ Sauce
3 Peaches, pealed and halved
3 Yellow Onions
1 tbsb butter or oil
6 buns
BBQ Rub, about 1 tbsp per chicken breast
